At Cornwall, we strive to serve the most healthy and delicious breakfasts and lunches. Menus are planned in accordance with USDA nutrition standards and meal pattern requirements. Seasonal ingredients are procured from our community’s agricultural producers and integrated into the menu as availability permits, with special focus on the Harvest of the Month ingredient. The menu rotates on a 5-week cycle to highlight student favorites while also integrating new side dishes, fruits, and vegetables to encourage the tasting of a variety of foods. Each menu is sent home in Friday folders prior to the start of a new month in addition to being posted on the website.
Meals are prepared using whole, nutrient-dense ingredients. No dessert is served and artificial ingredients, such as High Fructose Corn Syrup, refined grains, and refined sugars are significantly limited. To maximize their nutritional value, the majority of fruits and vegetables are served raw and all grains served are at least 50% whole. Milk is either 1% or skim and water is always available and encouraged. Proteins are regularly plant or dairy-based and include but are not limited to: yogurt, cottage cheese, cheddar cheese, black and refried beans, edamame, eggs, and tofu. Ground beef (grass-fed and finished) from Meeting Place Pastures in Cornwall as well as ground turkey and turkey breasts (all natural and humanely harvested) from Stonewood Farms in Orwell are also served frequently.
